Cut the pumpkin into bite-sized cubes and toss them in oil, salt, and pepper. Bake them at 220C/430F for about 20 minutes. Flip them, and bake for another 10 minutes or until browned.
While the pumpkin is cooling, roast the pine nuts in a dry pan until slightly browned.
Plate the spinach and top with pumpkin cubes. Garnish with pine nuts and crumbled feta.
Serve with your favorite Balsamic-based salad dressing!

Drizzle a baking sheet with 1 tbsp olive oil and cover it with the sweet potatoes, Brussels sprouts, and apples. Put the chicken thighs on top and sprinkle the remaining oil, salt, pepper, garlic, and fresh herbs on top of everything. Remember to season both sides of the chicken.
Bake for 30 min. At 200C/400F and then immediately broil for another 5-10 minutes until the chicken skin is crispy.

Cut off the top of each apple and remove the core with a knife or melon baller nearly to the base of the fruit. Use a pairing knife to cut two rings into the apple, creating onion-like layers. Next, turn the apple upside-down and make vertical cuts around it. The apple should be cut into petals, but each piece should remain connected to the base of the core.
Whisk the butter, cinnamon, brown sugar, and white sugar into a bowl to create a glaze.
Add two caramel chews to the core of each apple and carefully brush the petals with the glaze.
Bake at 190C/375F for about 30 minutes or until the apples are tender.
Serve hot topped with a scoop of vanilla ice cream and drizzled with caramel sauce.
