Strawberry-Pecan Spinach Salad – Recipe

This is a summertime favorite around our house. Fresh in-season strawberries are balanced with crunchy pecans and mild feta on a bed of iron-rich spinach. Cover it all with a blanket of warm, syrupy balsamic dressing. Yum!

Ingredients:

  • 4 cups spinach
  • 1 cup strawberries, sliced
  • 1/2 cup pecan halves
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp. honey
  • 1/4 cup balsamic vinegar
  • 1/2 cup olive oil
  • 2 cloves garlic, minced
  • Dash of salt and pepper

Directions:

  1. Heat oil and add garlic until browned (30-40 seconds).
  2. Turn off heat and whisk in vinegar, honey, salt, and pepper.
  3. In large bowl toss spinach, strawberries, pecans, and feta.
  4. Pour warm dressing over salad and toss again.
  5. Enjoy!
