Turkey Bolognese - Recipe

Love meaty, Italian sauces like authentic Bolognese but watching your fat intake? This is a delicious modified recipe using lean turkey and many traditional Italian ingredients. The taste will have you exclaiming that familiar phrase, "That's Italian!"

Ingredients:

  • 1 lb. any broad pasta
  • 1 1/2 tbsp. olive oil
  • 1 red onion, chopped
  • 2-3 cloves of garlic, minced
  • 1 large carrot, shredded
  • 1 red bell pepper, diced small
  • 1 lb. lean ground turkey
  • 2 tomatoes, fresh, diced
  • 1 tbsp. tomato paste
  • 1/2 cup low-sodium chicken broth
  • 1 tsp. chili powder
  • 1 tbsp. honey
  • Salt & pepper to taste

Directions:

  1. Fill large pot with cold water to cook pasta. Add a dash of salt to water and bring to a boil.
  2. Heat oil in a large skillet over medium heat. Add onion, garlic, carrots, and red pepper. Cook 2-3 minutes.
  3. Add turkey. Cook until browned. Crumble turkey while cooking.
  4. Add broth, Worcestershire sauce, tomatoes, tomato paste, honey, salt and pepper.
  5. Allow broth to cook down until it begins to thicken (about 10 minutes).
  6. Drain pasta, but do not rinse.
  7. Serve Bolognese sauce over pasta.
